Recipe:
What you need:
- 1.5 kilo tomato
- 1 large onion
- 2 wedges of garlic
- 1 small chilli (optional)
- 6 tablespoons of virgin olive oil
- 2 vegetable bouillon cubes
- 2-3 sprigs thyme & parsley for sprinkles.
What to do:
- Cut and lightly brown the onion and garlic in the virgin olive oil.
- Pour the cut tomatoes,thyme sprigs and the boullion cubes with 1 liter of water into the onions and garlic.
- Boil on medium heat for 25 minutes.
- Remove the thyme sprigs, and after that blend with stick blender.
- At last sprinkle parsley on top as garnish to enjoy.
- For the real hedonist a tablespoon of delicious creme fraiche on top of the soup is just the thing.
